Healthy Recipes Cheeseburger Wrap

Since I titled my book on healthy eating Have Your Cheeseburger And Keep Your Health Too!  it's no surprise that I like cheeseburgers, but my latest variation on giving a cheeseburger a healthy food makeover was inspired by my recent trip back East to Florida to visit family. 

How The Cheeseburger Wrap Came To BeRecipes

It seems that the second box of Boca Burgers that my accommodating brother-in-law brought for the family barbecue to meet the dietary needs of my husband and I were still lurking in the freezer since late November, just begging to see the light of the kitchen (by the way, if you're not into meatless, read on, we can still make this a healthy option, just use a lean turkey burger). 

Plus, I had just done a supermarket run with my mother-in-law and the deli section was giving out a free package of Flatout bread to anyone who purchased a pound of deli meat or cheese (which she had done for the kids).  Love fresh Flatout bread!

Inspiration struck and a new creation--Aunt Melanie's Cheeseburger Wrap--was born!

My eight and eleven-year-old nieces were so intrigued watching me make it (my four-year-old niece especially had fun eating the strips of cheese before I could get them into the cheeseburger wrap), plus they loved it when they tried it, that I think it'll be a hit not only with you, my loyal adult readers, but also for the kids in your household, or your life.

Note:  I do this as a vegetarian recipe, but a lean turkey burger is also fine if you don't want to go meatless.

The Healthy Recipe: Cheeseburger Wrap

Ingredients:

1 Light Whole Wheat Flatout Bread (or the high-fiber, whole grain wrap of your choice)

2 Standard Size Boca Burgers or 1 Large restaurant-size (or the meatless burger of your choice, or a lean turkey burger)

1 slice Fat Free American Cheese (or the favorite fat free cheese of your choice)

Shredded Romaine Lettuce

Organic Ketchup (to taste)

Light soy sauce or worcestershire sauce

Directions:

Cook Boca Burger as usual (I like to add a little light soy sauce or worcestershire when pan frying with olive oil spray and cook about 4 minutes on low-medium heat per side).  Cut up burger into small pieces.  Cut up thin strips of the cheese leaving on the back of the wrapper until you're ready to use. 

Lay out wrap and make about an inch wide line with pieces of chopped Boca Burger, layer a couple of strips of cheese over the burger, add shredded lettuce and a drizzle of ketchup.  Roll up wrap tightly to cover the mixture and keep repeating until you've filled and rolled it all up.  Any leftover items can fill in any gaps on the ends.  Slice in half and serve. 

It's messy, but really good and should bring smiles all around (and the kids won't realize they're eating vegetarian if you use that type of burger).  Now that's healthy eating with favorite comfort foods!

Healthy Food Review Rice Expressions Whole Grain Brown Rice Pilaf

Rice Expressions Whole Grain Brown Rice Pilaf is now a major component in one of my new favorite healthy, fast and lazy dinners!

I discovered Rice Expressions on a recent shopping trip to my local Whole Foods Market when I had some time and just wandered the freezer aisles checking for new products to try.  I've been super busy lately writing my newest book, so any quick and healthy meal I can make is a huge help.

I love rice pilaf, but it is not often offered in its healthiest form for very quick preparation.  And I love brown rice, but while the various brands of 10-minute boil in bag brown rice are quick, they usually aren't pre-seasoned, so then you are left with wondering how to give the brown rice some flavor other than using a quick standby like dumping marinara sauce on it.

Rice Expressions saves the day!  It offers not just organic brown rice, but organic brown rice pilaf that already is pre-packaged with delicious seasoning and peas and carrots.  Since Rice Expressions is frozen, you don't have to add any water or do anything to prepare other than making a slit in the package to vent it.  Best of all, this terrific dish organic brown rice pilaf dish can be served up in just 3 minutes!

To make it a complete meal for me, I'll simultaneously cook some Morningstar Farms Chik'n Starter Strips in a pan with some olive oil spray (which also takes about 3 minutes to gently brown.  Then as soon as the microwave buzzer sounds, I zip open the Rice Expressions package, tip out the pan's "chicken" contents, sprinkle some reduced fat parmesan cheese on top, and viola--a 3 minute healthy dinner!

Each Rice Expressions bag (2 in a package), is two servings.  So depending upon how hungry you are, you can use half a package, or a full one like I tend to do for dinner since Rice Expressions Whole Grain Brown Rice Pilaf is just 165 calories a serving with 3 grams of fat, no saturated fat, no trans fat, no cholesterol, 3.5 grams of fiber and 4 grams of protein. 

Two caveats are that I think Rice Expressions Whole Grain Brown Rice Pilaf could use more vegetables (which, in fairness, is true of many prepared dishes, although the amount of vegetables is better than most).  When I have more than 3 minutes, I'll add some more organic frozen mixed vegetables to the mix.  Plus, Rice Expressions could seem expensive to the budget-conscious.  However, when you compare it to trying to buy fattening fast food, it's worth the extra expense, as it gives new meaning to "fast food" in a positive, healthy way.

Rice Expressions makes a few varieties, but the organic brown rice pilaf one is my personal favorite.  It should be available to most of my loyal readers in a natural foods market in all but 5 states at this time.
